I marinated mine overnight in fish sauce and chili paste. Prep them if not already. Cut the tentacles from the head, reach inside head an remove quill, (it actually looks like a quill). Next find the thin/long ink sac in the head and carefully cut out. Squeeze the head right between the eyes to get any excess ink out. Pull beak out from beneath the tentacles.
then chop them up!
Make the breading:
I used one parts flour, and one parts rice flour.
Bread crumbs, salt, pepper, cayenne pepper.
Dip the squid parts in egg yolk, and then into the spiced breading, and then into oil.
I kept some of the squid to fry up with some rice.
then eat!

ps...it's Mango/passion fruit, peach sorbe; slightly melted and then scooping into 3" mini pie crusts, mixed with granola, topped with mananas, and then more granola, then frozen. Put chocolate on top if you like. Get a beer, and then you're good!
Oh god oh god oh god I love squid so much. When I was in New Orleans I got this huge plate of various seafood, and they had a HUGE squid. Not one of those tiny shriveled up things of calamari, but it was gigantic.
